Nellie’s Taco Soup Recipe
Last week my mom came and visited! She brought ingredients and we made her famous taco soup! It was delicious! You can cook this stove top or use a crockpot. We just cooked it stove top.
Step one: (Brown separately stove top) 2 pounds extra-lean ground turkey (I used the Jennie-O brand)
Step two: Add the cooked meat with these ingredients in a large pot on the stove top and cook for 30 minutes (on high) to 60 minutes (on medium) OR cook in a crockpot on low for 5 hours. Pour a cup to two cups serving size into a bowl and enjoy.
2 cans stewed tomatoes
1 packet of low-sodium taco seasoning
1 packet ranch dressing dip mix
1 can low-sodium kidney beans (rinse with water first)
1 can low-sodium black beans (rinse with water first)
1 can cream style corn
1 can chopped green chiles (mild)
1 can 15 oz tomato sauce and 1 can of water (using the tomato sauce can once empty)
Optional: you can add a few tortilla chips or crackers on top to add some crunch! Personally, I just ate it plain.
For my fitness folks: if you are measuring your portions, you can leave the meat separate and cook the other ingredients together. When everything has cooked, measure 4-5 ounces of meat and about 3/4 cup of the soup mix and mix it in your serving bowl for a meal. This is great for meal prep!
