Hi fit family! My hubby and I love to come up with healthy recipes to have on hand for snacking. These are great to make on Friday night and have on hand for the weekend!
Zesty Turkey Meatballs
Ingredients:
1 package extra-lean turkey
1 package Ranch dip mix
1/3 cup old fashioned oatmeal
¼ cup red onion
1 small chopped jalapeno (remove the seeds)
1 teaspoon chipotle chili pepper
Preheat your oven to 375 degrees. Cover a cooking pan (cookie sheet) with foil. Lightly spray the sheet with cooking spray. Using your hands, form meatballs with the turkey and place them on the cooking sheet in golf ball sized bites. Cook at 375 degrees for 27 minutes. For a complete meal, add a complex carbohydrate and vegetable.
Serving size: 4 oz turkey (measured cooked)

These will keep 2-3 days in the fridge but you can always freeze them if you need to travel with them or are prepping in bulk.
