Breakfast Casserole Recipe

Hi fit family!

I don’t know about you, but I love breakfast food any time of day! I hope you enjoy this dish like my family does! It’s super yummy with a little salsa or hot sauce on top. Enjoy! Love, Kelsey

Potato, Black Bean and Egg Casserole
2 cups of liquid egg whites (12 egg whites)
4 oz hash browns (I buy the frozen bags)
1 can (15 oz) drained & rinsed black beans
½ cup red bell pepper
2 tablespoons pico de gallo.

Preheat oven to 375 degrees. Combine ingredients in medium sized mixing bowl. Lightly coat a baking dish with non-stick cooking spray. Pour combined ingredients into 7×11-inch glass baking dish. Once oven is heated, bake for 43 minutes at 375 degrees. Cut cooked casserole into six even squares.

One serving = 2 squares
